Quick and Easy Beef Tortelloni

Beef tortelloni easy recipe

I am taking part in the #MeatMatters challenge, where we were asked to create a family meal using lamb or beef which can be cooked in under 30 minutes. I chose to create a beef meal as beef is rich in protein and is also a source of iron which helps reduce tiredness and fatigue. It is also really tasty and a firm favourite with both my husband and my 11-year-old! Being a busy mum who works part-time, blogs and[Read more]

Hidden design cake

hidden design cake recipe

I made this hidden design cake for my daughter, LJ’s, birthday as she loves homemade cakes and each year I am tasked with thinking of a new cake! She is a huge Disney fan and her boyfriend booked them a holiday to Disney Land Paris for her present, so I decided to use a Mickey Mouse shape in the cake.  Hidden design cake Save Recipe Print Recipe My Recipes My Lists My Calendar Ingredients300g Stork or similar300g Caster sugar6 eggs300g Self-raising[Read more]

42 days of summer!

Tuna pasta salad

I love having meals that can be thrown together quickly for nights where we are extra busy as it saves us from relying on a take-a-way which saves us money. It is also much healthier then most take-a-ways too and as I am a self confessed control freak knowing I have something quick and easy makes me feel much more in control of things which keeps me happy! I thought I would share with you one of those simple meals.[Read more]

Mango upside down cake

We decided to try a new twist on an old favourite so we substituted the well known pineapple for mango to see what it would be like and I have to say, it works really well. In fact my whole family said that they prefer the mango to pineapple in this cake and Faith really enjoyed cooking it with me. To make your own you will need; For the topping * 50g stork or similar. * 50g soft light brown sugar. * Small[Read more]
